The definition of the coefficient ranges between perfect positive correlation (1) to perfect negative correlation (-1). Both these extremes point to perfect linearity, and since nothing can be straighter than a straight line, the closeness to a straight line is what the correlation coefficient is measuring, so it's simply not possible by definition to have a value in excess of 1 in either direction. You cannot improve on perfection.
