There are a number of solutions. Here’s one:

495-328=167

From this you get:

495-127=368, 567-429=138, 495-128=367, ...

More solutions:

567-249=318, 675-183=492, ...

Hint: Work with addition instead of subtraction: - - - = - - - + - - -. Also, the result of adding two digits has to create a carryover, so the sum must be bigger than 10. For example, 9+8=17 so this uses up digits 7, 8 and 9, leaving 1-6 for the rest. By inspecting 1-6 and working out all possible sums, you only have to find one sum (using these digits) that needs a carryover and the other that doesn’t to complete the solution. Then rearrange the numbers you find into a subtraction. Since, for example, 3+1=1+3 you can find different solutions by interchanging digits.
