One eighth minus two eighths is negative one eighth: 1/8-2/8=-1/8, just like 1-2=-1 or $1-$2=-$1. Or, think of a thermometer: one degree above freezing less two degrees is one degree below freezing. One of anything less two of the same thing is negative or minus one of that thing. An eighth is still a "thing".
