x^3 - 27 is a perfect cube.

x^3 - 27 = 0

bring over -27 (change the sign)

x^3 = 27

then take the cubed root of 27

you get x = 3

x^3 - 27
x^3 - 27 = 0
x^3 - 3^3 = 0
(x - 3)(x^2 + 3x + 3^2) = 0
x - 3 = 0 ⇒ x = 3
