When taking away what number goes at the bottom the large number or the small one
when taking away numbers any numbers what number goes at the bottom eg 100-60??

It depends on how the problem is stated. You cannot assume that the smaller
number is always subtracted from the larger number:
   100
 -  60
------
    40

It is entirely possible to subtract the larger number from the smaller:
    60
 -100
-------
  -40

So the only rule is: determine what the problem is telling you.
