When x is 5 or more it's the graph of y=f(x)=x-3, which starts at the point (5,2) and has a positive slope of 1. Since it's linear, all you have to do is pick a value of x greater than 5 (e.g., 10) and fix another point (e.g., (10,7)) and draw a line from (5,2) through the other point.
The other half of the graph is a reflection in the line x=5. This part ends at (5,2) and represents all values of x less than or equal to 5. It has a negative slope of -1. When x=5 or less it's the graph of y=5-x+2=7-x. Pick another point, say, (0,7) and draw a line from (5,2) through (0,7) (the y intercept). You now have the complete V-shaped graph. The angle of the point of the V is 90 degrees.
